A just-because lunch party

It's starting to feel a lot like summer around here, so today we brought out the paper partywear to celebrate. With big smiles, the kids ran to their places at the table and asked, "What's this for? Why does it look like a little party in here?" And I told them I thought lunch would be more fun this way. Their response: "Yeah, it is. Let's do this every day."

Just what I like to hear.

When I bring out the "special" plates (from Dollar Tree or the 40% off section at Michaels!), there's usually a lot less complaining about the lunch menu, too. It's a win-win. Today I loaded up the kids' plates with a variety of fruit and veggie sandwiches. I spread hummus and avocado on either slice of bread, then packed the middle with tomato, cucumber, spinach and cheese. There's so much good stuff loaded in those sandwiches—and so much fun happening at the party table!—the kids don't even miss the lunchmeat. 

For dessert, we had popsicles we made from organic pink lemonade. Mmmm.
